The potato tortello owes its tradition to the particular combination of ingredients and processing systems, which have remained the same over time. The potato tortello was born as a poor dish: the filling becomes potatoes with the harvest of the first potatoes sown around the middle of 1800. In fact, this filling becomes an alternative to the chestnut fruit known and collected in all areas of the Apennines.
