The Val of Sieve, entirely covered by beech and chestnut woods, offers postcard scenery. It is the territory that embraces the province of Florence between the verdant valley of the river Sieve, on the border with the Mugello. It is an area that is characterized by being a mixture of colors and shapes: from the landscape dotted with vineyards and olive groves and fruit trees to the wildest and most rugged landscape. Val of Sieve is full of abbeys, churches, villages and places to explore.

Edoardo and Klodiana carry on this project driven by three things, love, passion and madness. In the kitchen research on raw materials, processing and combinations of flavors prevails. Consistency with all that once was, today is no more and to exist it needs to adapt to contemporaneity. In the room there is the rigor of service combined with the almost maternal empathy that pampers the customer. A multi-sensory journey through a heritage of flavors and knowledge that no one can afford to limit but that a chef must know how to interpret and ferry into the present.
